SAVORY EGG BOWL​

INGREDIENTS

​

  • 2 pastured or organic eggs

  • 1 cup cooked quinoa

  • 2-3 cups fresh spinach or greens of choice

  • 1 TBSP vegan butter

  • salt and pepper

INSTRUCTIONS

​

  1. Melt butter in skillet and cook greens over medium/low until wilted.

  2. Push greens to the side of the pan or remove completely and cook eggs over easy- about 2 minutes on one side and flip just for 30 seconds or so depending on how you like your eggs cooked.

  3. Salt and pepper eggs and greens

  4. Layer greens over quinoa and top with egg
