SAVORY EGG BOWL​

INGREDIENTS

2 pastured or organic eggs
-
1 cup cooked quinoa
-
2-3 cups fresh spinach or greens of choice
-
1 TBSP vegan butter
-
salt and pepper

INSTRUCTIONS
​
-
Melt butter in skillet and cook greens over medium/low until wilted.
-
Push greens to the side of the pan or remove completely and cook eggs over easy- about 2 minutes on one side and flip just for 30 seconds or so depending on how you like your eggs cooked.

Salt and pepper eggs and greens
-
Layer greens over quinoa and top with egg
