CINNAMON MAPLE QUINOA BOWL

* Consider making this with your lunch prep and having a quick breakfast all week

INGREDIENTS (this is 1-2 hefty servings)

1/2 cup quinoa
-
1 cup cold water
-
1/2 teaspoon cinnamon + more for garnish

2 teaspoons vegan butter
-
unsweetened nut milk to taste
-
1 TBSP maple syrup to taste
-
banana slices
-
crushed pecans

INSTRUCTIONS

Rinse quinoa in water.

Drain quinoa, then stir in 1 cup cold water, 1/2 teaspoon cinnamon and 1 teaspoon butter.

Bring to a boil over medium high heat then turn down to simmer for 12-15 minutes, covered or until water is absorbed.

Turn heat off and let stand, covered for 5 more minutes.

Fluff quinoa and stir in remaining butter.

Divide between 2 bowls
-
Top with milk, maple syrup, banana slices, pecans and cinnamon to taste.
