CINNAMON MAPLE QUINOA BOWL

* Consider making this with your lunch prep and having a quick breakfast all week

​

INGREDIENTS (this is 1-2 hefty servings) 

​

  • 1/2 cup quinoa

  • 1 cup cold water

  • 1/2 teaspoon cinnamon + more for garnish

  • 2 teaspoons vegan butter

  • unsweetened nut milk to taste

  • 1 TBSP maple syrup to taste

  • banana slices

  • crushed pecans

INSTRUCTIONS

​

  1. Rinse quinoa in water.

  2. Drain quinoa, then stir in 1 cup cold water, 1/2 teaspoon cinnamon and 1 teaspoon butter.

  3. Bring to a boil over medium high heat then turn down to simmer for 12-15 minutes, covered or until water is absorbed.

  4. Turn heat off and let stand, covered for 5 more minutes.

  5.  Fluff quinoa and stir in remaining butter.

  6. Divide between 2 bowls

  7. Top with milk, maple syrup, banana slices, pecans and cinnamon to taste.
