STUFFED CABBAGE SOUP

INGREDIENTS

  • 1 tbsp olive oil

  • 1 large onion, finely chopped

  • 4 garlic cloves, finely chopped

  • 2 red peppers, chopped (seeds & stems removed)

  • 3/4 cup short-grain brown rice

  • 2 cups lentils  (any color, sorted & rinsed)

  • 3 tbsp tomato paste

  • 1 1/2 cups crushed tomatoes

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 4 cups vegetable broth

  • 1 cup water

  • salt & pepper to taste

  • Parsley to top

INSTRUCTIONS​

  1. Heat the olive oil in a large pot on medium-high heat.

  2. Add the onion and let cook for 3-4 minutes, then add the garlic and red pepper and cook another 2-3 minutes.

  3. Add the rest of the ingredients and stir to combine.

  4. Cover, reduce heat to low and let simmer for 30-40 minutes until the rice is tender and cooked.

  5. Serve with parsley
