QUINOA PANCAKES

Make a double batch and have for breakfast all week.

INGREDIENTS

​

  • 1 cup soaked quinoa (soak 1 cup of quinoa in 4 cups of water overnight)

  • 1 TBSP raw honey

  • 2 TBSP coconut oil

  • 1/4 tsp cinnamon

  • 1/2 TBSP baking powder

  • pinch of sea salt

INSTRUCTIONS

  1. Blend soaked quinoa in food processor or blender until a wet batter is formed, 3-5 minutes.

  2. Add wet ingredients and process until blended.

  3. Mix dry ingredients together in a separate bowl. Add dry mix to batter and mix well.

  4. Heat greased-cast iron or non-stick skillet to low/medium heat.

  5. Using 1/4 a cup at a time, pour batter onto skillet.

  6. Cook for about two minutes or until the pancake is golden. You should see bubbles form and then pop around the edges. 

  7. Flip pancake and cook for another minute or two. 

  8. Top with bananas or berries, a touch of raw honey or almond butter
