CHICKEN & HERB DRESSING SALAD OVER GREENS

All of the components of your lunch menu are meant to be interchangeable. 

If you run out of chicken, try sweet potatoes as a sub.

If you run out of tahini, simply replace with creamy herb dressing.

No more pumpkin seeds? Simply sub with another seed or your favorite nuts

These flavors all pair well together!

  • Layer baked chicken on a bed of mixed greens and romaine 

  • Top with chickpeas, red onion, cucumbers, carrots and any additional nuts or seeds

  • Finish with creamy herb dressing and pumpkin seeds

​

I save all of the glass jars that my seasonings come in and use them to pack dressing for lunch.

A small tupperware will do just fine too.
