INGREDIENTS

  • 2 lbs Italian cut green beans, frozen

  • 2 14 oz cans of diced tomatoes, drained

  • 1 8 oz can tomato sauce

  • 1 tsp black pepper

  • 1 tsp salt

  • 2 tsp (or as much as you'd like) dried basil

  • 1 medium yellow onion, small-diced

  • 6 large cloves of garlic, crushed lightly (yes 6 cloves!)​​

  • 4 cups cooked organic brown rice or quinoa to serve over

INSTRUCTIONS​

​​

  1.  In a large skillet, heat 1-2 TBSP avocado oil over medium high heat and saute onions and garlic until onions are translucent and beginning to brown

  2. Add green beans (still frozen) and saute until beans begin to thaw and cook

  3. Add diced tomatoes, tomato sauce, basil, salt and pepper

  4. Stir well, cover and simmer for 20 minutes, stirring occasionally until beans are softened

  5. Adjust basil, salt & pepper as needed

Serve over a bed of brown rice 

​
