INGREDIENTS

2 lbs Italian cut green beans, frozen

2 14 oz cans of diced tomatoes, drained

1 8 oz can tomato sauce
-
1 tsp black pepper
-
1 tsp salt
-
2 tsp (or as much as you'd like) dried basil
-
1 medium yellow onion, small-diced
-
6 large cloves of garlic, crushed lightly (yes 6 cloves!)​​

4 cups cooked organic brown rice or quinoa to serve over

INSTRUCTIONS​
​​

In a large skillet, heat 1-2 TBSP avocado oil over medium high heat and saute onions and garlic until onions are translucent and beginning to brown
-
Add green beans (still frozen) and saute until beans begin to thaw and cook
-
Add diced tomatoes, tomato sauce, basil, salt and pepper
-
Stir well, cover and simmer for 20 minutes, stirring occasionally until beans are softened
-
Adjust basil, salt & pepper as needed

Serve over a bed of brown rice
