PINEAPPLE CHICKEN

INGREDIENTS

2 cups of uncooked organic brown rice

Avocado oil
-
4 boneless skinless chicken breasts

1/2 cup diced red peppers
-
1/2 cup diced green peppers
-
1/2 cup thinly sliced green onions
-
4 TBSP fresh cilantro
-
1 20 oz can pineapple tidbits (in water) or 2 1/2 cups fresh small-cut pineapple pieces

1/2 tsp salt
-
1/4 tsp pepper
-
1 tsp garlic powder

INSTRUCTIONS​

Prepare rice by cooking 2 cups of dry rice according to package directions and set aside

While the rice is cooking, in a small bowl, combine red and green peppers with pineapple, green onion and cilantro
-
Heat 1-2 TBSP avocado oil in large pan, season chicken with salt, pepper & garlic powder and brown for 5-7 minutes per side or until internal temp reaches 165 degrees.

Serve chicken over a bed of rice and top with "pineapple salsa"
