BLACK BEAN BURGERS

INGREDIENTS

  • 1 can of organic black beans rinsed & drained

  • 1/4 cup quinoa + 1/2 cup water

  • 1/2 cup almond flour (gluten-free breadcrumbs, or ground oats)

  • 1/4 cup minced red, orange or yellow pepper

  • 2 TBSP minced onion

  • 2 cloves of garlic minced

  • 1 mushroom minced (optional)

  • 1 organic pastured egg

  • 2 tsp cumin

  • 1 tsp hot sauce

  • 1/2 tsp salt

  • avocado oil to cook in

INSTRUCTIONS​

​​

  1.  Make quinoa: Bring quinoa and water to a boil, reduce heat to medium low and simmer for 15 minutes

  2. In a medium sized bowl, roughly mash the black beans with a fork into somewhat of  a paste

  3. Mix quinoa, almond flour, pepper, onion, garlic, mushroom, cumin, hot sauce, salt & egg into black beans

  4. Incorporate ingredients well and then form 5-7 small to medium sized patties

  5. Heat 1-2 TBSP avocado oil in a pan over medium-high heat and cook 3-4 minutes per side until very golden brown (make sure the first side is cooked well before flipping or burgers will begin to crumble)

*serve over mixed greens, on a piece of hearty romaine or on a gluten-free bun with a dollop of avocado mayo, sliced avocado, dill pickle and ketchup.
