BLACK BEAN BURGERS

INGREDIENTS

1 can of organic black beans rinsed & drained
-
1/4 cup quinoa + 1/2 cup water
-
1/2 cup almond flour (gluten-free breadcrumbs, or ground oats)
-
1/4 cup minced red, orange or yellow pepper
-
2 TBSP minced onion
-
2 cloves of garlic minced
-
1 mushroom minced (optional)
-
1 organic pastured egg
-
2 tsp cumin
-
1 tsp hot sauce
-
1/2 tsp salt
-
avocado oil to cook in

INSTRUCTIONS​

Make quinoa: Bring quinoa and water to a boil, reduce heat to medium low and simmer for 15 minutes
-
In a medium sized bowl, roughly mash the black beans with a fork into somewhat of a paste
-
Mix quinoa, almond flour, pepper, onion, garlic, mushroom, cumin, hot sauce, salt & egg into black beans
-
Incorporate ingredients well and then form 5-7 small to medium sized patties
-
Heat 1-2 TBSP avocado oil in a pan over medium-high heat and cook 3-4 minutes per side until very golden brown (make sure the first side is cooked well before flipping or burgers will begin to crumble)

*serve over mixed greens, on a piece of hearty romaine or on a gluten-free bun with a dollop of avocado mayo, sliced avocado, dill pickle and ketchup.
